Well, I've nearly blown through the 300km break-in period already, so I'll be changing the oil soon. Is it safe to switch to synthetic oil at 300km or should I wait?
The bike has behaved well, has pretty good pickup and does a solid 70kph. Feels like it will do at least 75, but I don't want to flog it before it's broken in.
Trouble-free other than a burned out turn signal.

I don't know what kind of bike you have, but I have used "MOBIL 1" in my GL-50 top tank since my first oil change at 1000 kms. I then changed the oil every 2000 kms thereafter. The bike now has 16,473 kms on it, and doesn't burn a drop of oil. Draw your own conclusion.

I have an RC Passport, same engine as the GL-50 except for the auto clutch. I'm supposed to change the oil after 300km, when the break-in period ends. So I was wondering if it's OK to switch to synthetic at that point, or if I should use the cheap stuff for awhile longer to let it wear in a little more.

The manual that came with my GL-50 says to change the oil at 1000 km and every 2000 km thereafter. This worked well for me. My guess is that 300 km or 1000 km for the first change is'nt going to make much difference. I change on the odd 1000 km increment which is easy to remember. Please note this only my opinion.
